I love this recipe for the nutritional facts about black beans. They are an excellent source of protein and contain a lot of nutrients needed by the body, such as vitamin K, vitamin C, manganese, vitamin A, dietary fiber, potassium, folate, iron, magnesium, thiamine, riboflavin, copper, calcium, phosphorus, protein, omega-3 fatty acids and niacin. Black beans are also a very rich source of fiber, these nutrients play important role to prevent cholesterol from becoming oxidized and heart disease.

Ingredients

1 lb of dried black beans
1 (32 ounce) Vegetable broth
1 (14.5 ounce) can Vegetable broth
1 (14.5 ounce) can stewed tomatoes
1 (14.5 ounce) can diced tomatoes, or diced tomatoes with green chilies
1 (11 ounce) can Mexicorn, drained
1 (4 ounce) cans chopped green chilies
4 green onions, thinly sliced
2 tablespoons chili powder
1 teaspoon ground cumin
4 clove garlic
teaspoon dried minced garlic


Directions

Take 1 lb of black beans and 32 ounces of vegetable broth and boil in pot for about an hour. Bring to boil and then simmer. Put in crock pot on high for about 2 hours. Then add everything else and cook for another 4 hours.
